Local cuisine

The cuisine in Biarritz is similar to the cuisine thats considered typical of the southwest of France; however, it also includes some significant Basque influences, which are based on its relationship with the sea and locally produced ingredients. Bayonne ham is a popular local delicacy and is produced by a careful six-month drying process, the fundamentals of which date back hundreds of years. The meat is traditionally eaten alongside a good Iroulguy wine.

Meanwhile, local seafood dishes combine eel, cod, hake and squid among other ingredients to make some truly mouth watering creations. Veal stew with chilli and sweet peppers, foie gras and duck magret are also on the list of notable local dishes. Cojones are tasty however not for the squeamish, as they are actually stuffed bull testicles.
